4 large eggs
2 cups flour
2 cups sugar
2 tsp. soda
2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1 1/3 cup salad oil
3 cups grated carrots
1 tsp. vanilla
1/3 cup shopped walnuts (opt.)
1 tsp. grated orange rind (opt.)
Frosting:
1 3-oz. pkg. cream cheese
1 cube butter
1 1/2 tsp. vanilla
Powdered sugar

Directions:
Directions:
Mix all dry ingredients, add eggs, oil and vanilla. Mix well before adding carrots and nuts. Mix all thoroughly and pour in lightly greased, floured pan 9 1/2 x 13. Bake at 350° for 50-60 minutes.
Beat together cream cheese, butter and vanilla and add powdered sugar, a little at a time to right consistency. Can add milk or cream for smoother frosting.
