1/2 head iceberg lettuce
2 plum tomatoes
1 lb ground sirloin
2 tsp chili powder
1/2 tsp dried oregano
2 green peppers, chopped
1 small onion, chopped
1 can (15 oz) refried beans
4 burrito-size flour tortillas
3/4 cup shredded Cheddar cheese
1/3 cup sour cream

Directions:
Directions:
Shred lettuce (need 3 cups) and core and chop tomatoes; set aside. Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Crumble in the sirloin and season with chili powder and oregano. Cook 3 minutes. Reduce heat to medium and add green pepper and onion. Cook an additional 7 minutes, until vegetables are softened (add 1/2 cup water, if pan is dry).

Meanwhile, place refried beans in a bowl and microwave on HIGH 2 minutes, stirring halfway through.

Spread a tortilla with 1/4 cup beans. Spoon 2/3 cup of the meat mixture in center of tortilla with 1/4 cup tomato. Fold up tortilla, burrito-style; repeat, using all ingredients. Serve with sour cream.
