2 cups frozen pepper stir-fry mix
1 lb ground beef
1 can (15.5 oz) Sloppy Joe sauce
1/4 cup bottled barbecue sauce
1 pkg (8.5 oz) corn muffin mix
1 egg

Directions:
Directions:
Preheat oven to 400ºF. Coat 1 1/2-quart baking dish and large nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add 1 1/2 cups pepper mix; cook until softened, 3-4 minutes. Add beef; cook, stirring, until browned, 5 minutes. Drain excess fat. Stir Sloppy Joe and barbecue sauces into beef mixture; cook until thickened, 3 minutes. Transfer to baking dish. In bowl, whisk muffin mix, egg and 1/3 cup water until combined; pour over beef mixture. Top with remaining 1/2 cup pepper mix. Bake until cornbread is golden, 20 minutes.
