1/4 c. oil
8-9 lbs pork roast, cubed
3 extra large onions, chopped
6 c. green chilis, chopped
1 pint red pepper sauce
29 oz diced tomatoes ( 2 cans)
3 cubes cilantro bouillon
6 cubes chipotle bouillon
13 lbs canned hominy (2 jumbo cans)

For each canning jar, add:
1 ham bouillon cube
1/4 tsp. garlic, minced
1/4 tsp. pepper flakes (optional to taste)

Directions:
In a very large pot, heat the oil and saute the onions. Once tender, add the pork and brown the meat. Add all the ingredients except the hominy. Combine and heat through.

Take the pot off the heat. Rinse the hominy and then add it to the pot. Mix.

In a separate pot, heat water to boiling to fill canning jars before sealing them.

In each quart canning jar, add 1 ham bouillon cube, garlic, and optional pepper flakes. Fill each jar 3/4 with posole. Top off with boiling water leaving 1/2-3/4 inch head space. Wipe the each jar rim and cover with a canning lid and ring.

Pressure can for 90 minutes at the appropriate pressure for your elevation. Conifer, Colorado pressure is 15#.
