6 large bell peppers, cleaned and cut into pieces
1/4 c. jalapenos, optional
6 c. sugar
1 1/2 c. apple cider vinegar
1/2 tsp. salt
1 bottle liquid pectin
food coloring, green for green peppers and red for red peppers

Directions:
Directions:
Put half the peppers and half the vinegar into a blender and liquify. Pour into a large stock pot; repeat with other half of peppers and vinegar. If adding jalapenos, blend with peppers. Add sugar and salt; mix well. Bring to a boil and add pectin. Boil until mixture thickens when dropped from a spoon, about 20 minutes. Add a few drops of food coloring. Pour into sterilied hot jars and seal.

I use red peppers to have jars of red pepper jelly in addition to green pepper jelly during the holidays. Serve over a block of cream cheese and your favorite crackers. Delicious with pork and peas, too!
