7 c. chicken broth
7 chicken bouillon cubes
7 c. chicken, diced
1 3/4 c. long grain & wild rice mixture
3 1/2 c. carrots, diced
3 1/2 c. celery, diced
1 3/4 c. onion, chopped
3 1/2 tsp. garlic cloves, minced
3 1/2 tsp. thyme
hot water

In 7 hot clean quart sized canning jars, place one bouillon cube and one cup of chicken broth at the bottom of each jar. Allow to sit so that the bouillon cube starts to dissolve. Stir to mix.

Add to each jar, 1 cup of chicken, 1/4 cup of rice, 1/2 cup of carrots, 1/2 cup of celery, 1/4 cup of onion, 1/2 tsp. garlic, and 1/2 tsp. thyme. Stir the contents with a dull knife.

Top off each jar with hot water leaving 3/4 inch head space. Wipe the rim and cover each jar with a hot canning lid and ring.

Pressure can the jars for 90 minutes at the appropriate pressure for your elevation. Colorado canning pressure is 15 pounds.
