6 cups pitted and chopped fresh plums
1 large onion chopped
10 garlic cloves peeled and chopped
1 cup brown sugar
1 cup apple cider vinegar
2 bottles good quality ketchup
1 tbsp ginger
2 tsp salt
2 tsp pepper

Directions:
Set Ketchup aside
Add remaining ingredients in a large pot. Bring to a boil, stirring constantly. Then reduce medium heat stirring occasionally until reduced to BBQ sauce consistency, approximately 3 hours. Time depends on the ripeness of the fruit. Run through a jelly stainer or food mill. Return to pot and add ketchup.
Adjust salt, sugar and pepper to taste. Fill 8 sterile pint jars and cook in a hot water bath for 15 minutes.
