1 1/2C. raw rice
1 lb. ground beef
1 lg. onion, chopped
2 bouillon cubes
1tsp. salt
1tsp. dry hot peppers (or 1 whole fresh pepper)
2tbsp. chunky peanut butter
1 can tomato paste
1 to 2C. peeled & cubed eggplant
2tbsp. peanut oil

Directions:
Directions:
Cook rice according to directions. Brown onion, hot peppers and ground beef in oil. When brown add bouillon, salt, tomato paste and 1 can of water; add eggplant. Simmer until eggplant is soft and can be mashed. Add more water as needed. Mash eggplant. Right before serving, add peanut butter. Serve over rice.
