10 to 12 potatoes, thinly sliced
1/2 onion, finely chopped
Ham or Spam, thinly sliced
4 to 6 eggs
Cheese slices

Directions:
In and electric skillet, melt 2 to 3tbsp. shortening. Layer potatoes, mixed with onion. Sprinkle with salt and pepper. Top with ham or Spam. cook at medium heat until tender. Do not stir! Break eggs over top, breaking and spreading yolks. Cook until set. Place cheese slices on top. Cook until melted. Cut and serve.
