2 whole chicken breasts, split, skinned & debonned, Flour, seasoned with salt & pepper, 8T. margarine 1 sm. onion, chopped 1 (28-oz) can whole tomatoes(Italian plum preferred) 2 bay leaves 1 clove garlic 1tsp. oregano 1 tsp. basil, Salt & pepper 4 slices mozzarella cheese, Parmesan cheese, Hot cooked spaghetti

Dredge chicken in seasoned flour. Melt 2 T. margarine in skillet and brown chicken breasts on both sides. Remove to 10-inch square baking dish, sprayed with Pam. Add remaining margarine to skillet and saute onion until transparent. Drain tomatoes, reserving juice. Place whole tomatoes in skillet. Add bay leaves, garlic, oregano, basil, salt & pepper. Simmer until sauce cooks down, about 20 mins. Spoon generous amount of sauce over each chicken breasts, reserving rest in skillet. Place a slice of cheese on each piece. Sprinkle with Parmesan cheese. Bake at 350º for 30 minutes or longer until chicken is done. Add rest of juice to skillet. Allow to slowly simmer while chicken bakes. Place cooked spaghetti on each plate, top with skillet sauce and chicken.
