1 1/2 lbs. chicken breasts, cut into 1/2 inch cubes
1tsp. ginger
2tsp. sugar
1tbsp. cornstarch
3tbsp. water
3tbsp. soy sauce
1/3C. cooking sherry
2 (6oz. each) pkgs. Chinese pea pods
1/4C. oil
1C. whole almonds

Skin, bone and cut chicken into 1/2 inch cubes. In a bowl mix ginger, sugar, cornstarch; blend in water, soy sauce and cooking sherry. Thaw Chinese pea pods. In a wok, or skillet, heat oil over medium heat. Add whole almonds, stir and cook about 3 minutes. Add chicken and cook until meat turns white. Pour in sherry mixture. Cook until sauce thickens. Add pea pods, stir fry until hot and glazed. Serve at once.

*I double the liquid portion of this recipe for a moister dish. I also add water chestnuts, onion, mushrooms or whatever vegetables you like.
