1C. chopped onion
1C. chopped green pepper
1 (28oz) can diced tomatoes with liquid
1 (4oz) can mushroom stems and pieces, drained
1 (2 1/4 oz) can sliced ripe olives, drained
2tsp. dried oregano
1 lb. ground beef, browned and drained
12oz. spaghetti, cooked and drained
2C. (8oz.) shredded cheddar cheese
1 (10 3/4 oz) can cream of mushroom soup, undiluted
1/4C. water
1/4C. grated Parmesan cheese

Directions:
In a large skillet, cook ground beef and drain. Add onion and green pepper and saute until tender. Add tomatoes, mushrooms, olives, and oregano. Simmer, uncovered, for 10 minutes. Place half of the spaghetti in a greased 9x13 inch baking dish. Top with half of the vegetable mixture. Sprinkle with 1C. cheddar. Repeat layers. Mix the soup and water until smooth; pour over casserole. Sprinkle with Parmesan cheese. Bake, uncovered, at 350º until heated.
