"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Beef steak (round or other cheaper cut), cut in serving size
Onion, chopped

Gravy:
2 tbsp butter
Flour
Milk or water
Salt, pepper, garlic to taste

Directions:
Directions:
Round steak – or something similar – get a cheaper cut – it gets tender from being in the crock pot – I usually buy a big one and cut it into pieces.

Brown the steak in a pan (does not need to be fully cooked) – I use some oil so that it gets good and brown and leaves sort of burned pieces on the bottom of the pan for flavor for the gravy. Toss steak into the crockpot with some onion.

Gravy – melt 2 tbsp butter in the pan, take off heat and add enough flour to soak up all the butter, then start whisking in milk or water (or combination of the two), keep adding liquid until you have enough gravy, then season with salt, pepper, garlic, etc. and put back on heat, stirring constantly until gravy is thick.

Pour gravy over meat in crockpot – cook on low for probably about 4 hours – check once in a while to make sure it’s not drying out.
