CRUST:
2 packages crushed graham crackers
1 stick softened butter
1/4 cup sugar

TOPPING:
2 cups sour pitted cherries
4 tablespoons cornstarch
sugar to taste

FILLING:
2 (8 ounces) packages softened cream cheese
1 pint sour cream
1 cup sugar
1 teaspoon vanilla
1 teaspoon lemon juice
5 eggs, separated

Directions:
Directions:
1. Pack crust into spingform pan (bottom and 1/2 way up on the sides).
2. Mix cream cheese and sour cream. Add sugar, vanilla and lemon juice. Mix at high speed. Add 5 beaten egg yolks.
3. Beat egg whites until stiff. Fold into above mixture.
4. Pour into crust. Bake at 300º for 1 hour with door closed AND 1 hour with door open. (Leave oven on.)
5. When cake is cool, drain cherries. Mix juice with cornstarch. Heat in saucepan until clear. Add cherries and sugar to taste. Top cheese cake that has been removed from pan. Chill.
