2 15 oz cans black beans
1 15 oz can red beans
2 cups frozen corn, thawed
¾ cup celery, finely chopped
¾ cup red onion, finely chopped
2 medium carrots, finely chopped
1 jalapeno pepper, poke holes and marinate it in dressing
⅓ cup fresh cilantro, chopped
⅔ cup olive oil
3 TBS lemon juice
3 cloves of garlic, crushed
3 TBS red wine vinegar
1 tsp cumin
1 TBS sugar
2 tsp salt

1.Drain and rinse beans. Mix first six ingredients in a large bowl

2.Mix rest of ingredients (the dressing). Let the jalapeno pepper marinate for a while. Add dressing right before serving.

3.Serve with tortilla chips.
