1 lb. Boneless Chicken breasts
½ C. White wine
3 T. Soy Sauce
1 T. Cornstarch
½ t. Instant minced garlic
1/4 t. Ground ginger
1medium Green bell pepper, cut into chunks
½ C. Cashew halves

Directions:
Directions:
Cut chicken into bite-sized pieces and place in a 2 qt. round casserole. Combine wine, soy sauce, cornstarch, garlic and ginger in a 1 cup glass measuring cup. Pour over chicken. Cover with wax paper and microwave on high 4 minutes, stirring midway through. Add bell pepper, re-cover. Microwave on high 3-4 minutes, stirring midway through. Sprinkle with cashews and let stand 3 minutes. Makes 4 servings (Note: recipe can be doubles or halved)
