2 Chicken breasts (cut into finger width, mouth size pieces)
1 Carrot, thinly sliced
1 Med. Onion, diced
1 Clove garlic, diced
1/4 t. Basil
Pinch thyme
1 Green pepper, sliced like chicken
3 Broccoli stalks (cut into ½” lengths)
Cajun Seasonings (from you grocer’s seafood counter)
Salt and Pepper to your liking

Into skillet at med. high setting, melt about ½ stick butter and then add carrots, onions, garlic, basil and thyme. Shake on 5-6 shakes of cajun seasoning and stir around a bit. Cook until onions start to clear up (2-3 min.). Push these items to side of skillet and add chicken, salt and pepper. If you need more butter, add it here now. Add 5-6 shakes more of cajun seasonings and move the chicken pieces around a bit. Fluff all in pan for several minutes until chicken is almost cooked (maybe 5 min.) Add green pepper, broccoli stalks, and some more cajun seasonings -- stirring entire skillets contents until these last ingredients are well warmed (not mushy). Serve from skillet to plate
