unsweetened cocoa powder
16 oz semi-sweet chocolate chips (2 bags)
1/2 c. butter
5 eggs, separated
1 T. vanilla
1/2 c. powdered sugar
raspberries for garnish (optional)

Directions:
Directions:
Preheat the oven to 250º. Grease a 9" spring form pan (one where the bottom comes out or the sides come off). Dust the inside of the greased pan with cocoa powder and shake out the excess. Line just the bottom of the pan with waxed paper. In a pan over low heat, melt the chocolate chips and butter. While it's melting the chocolate, in a large bowl whisk together the egg yolks and vanilla.. Slowly add and beat the melted chocolate into the egg yolks. In another bowl, beat the egg whites at high speed until soft peaks form. Slowly beat in the powdered sugar. 1/3 at a time, gently fold in the egg whites to the chocolate. Spoon the mixture into the pan and bake for 1 hour. Use the toothpick test to determine if fully cooked in the center. Cool completely before removing the torte from the pan. Sprinkle the top with cocoa or powdered sugar and garnish with raspberries.
