1 lb. crabmeat
1 tsp Parmesan
1 T. chives
2 egg whites
1 T. Old Bay
1 tsp. Italian spices (mix of oregano and basil)
1 jalapeño
2 T. parsley
1 c. plain breadcrumbs

Directions:
Directions:
Preheat the oven to 400º. Grease a baking sheet. In a bowl, beat the egg whites and add all the ingredients except the crabmeat and 1/2 c. of breadcrumbs. Mix together then add the crab. Using 1/4 c. of mix, form 8 crab cakes. Bread them in the remaining breadcrumbs coating each side of the cakes completely. Place them on the baking sheet and lightly spray the tops with Pam. Bake at 400º on the bottom rack 5 minutes, then flip them over and bake an additional 5 minutes until golden brown.

You can use Italian seasoned breadcrumbs in place of the plain breadcrumbs and Italian spices.
