8 eggs, hard boiled
2 1/2 T. mayonnaise
2 tsp. Dijon mustard
1/4 tsp. pepper
1/2 tsp. parsley
salt to taste
2 T. onion, finely minced (optional)

Directions:
Directions:
Hard boil the eggs and allow to cool. Peel the shells off.

Carefully slice the eggs in half lengthwise. Remove the hard yolks and put them into a bowl. Add the remaining ingredients to the bowl and mix until smooth.

Refill the egg whites with the yolk mixture and serve.

You can either mix the parsley into the yolk mixture, or sprinkle it on top of the eggs at the end for garnish.
