Baby back or St. Louis style ribs
Your own or your favorite rib rub

Sprinkle the meat with the rub. Cut rib rack into 2 to 3 pieces. Wrap in foil and refrigerate for at least 3 to 4 hours or overnight. Place foil wrapped meat in oven at 250º. Bake for 11/2 to 2 hours. Remove foil and place ribs in a smoker or on grill, not directly over the charcoal or flame. Keep the temperature about 300. Smoke should be increased by using hickory chips or other fruit wood is good. Smoke meat for about 6 to 7 hours or until the meat easily slips from the bone. Slather ribs with your favorite BBQ sauce. Place over heat source for 5 to 10 minutes to lightly char surface. The sauce will brown quickly so be very careful not to allow them to burn. If not using a smoker, but the grill instead, it will not take as long.Serve with cole slaw and baked beans.
