1.5 pounds ground beef
1 small white onion
1 clove of garlic
2 small cans tomato paste
1 cup water
1 tbsp of chili powder
2 tsp of salt
1 bay leaf
3 cans of light red kidney beans (do not drain)
grated cheese ( mild or mozzarella or both!)
1 package of tortillas

Directions:
Directions:
Brown 1st four ingredients until tender, add remaining ingredients. Simmer for 2 hours
Fill tortillas with sauce and cheese, roll and place in 9x13 baking dish. Pour reaming sauce over top with cheese.
Bake 350 for 1 hour

When I make it I use 2 pans and freeze 1 pan. This tastes better the 2nd day!
