1-2 lbs. stew meat, cubed
2 T. oil
1 tsp. salt
1/2 tsp. pepper
1 onion, chopped
2 T. flour
1-2 cloves of garlic
1/2 c. red wine (optional)
1 1/2 c. beef broth (1 can)
1/2 tsp. rosemary
1 bay leaf
1/2 tsp. thyme
3 carrots, peeled and sliced thickly
2 stalks of celery, sliced thickly
2 medium potatoes, peeled and cubed

In a stock pot on medium heat, brown the stew meat in the oil. Add the salt and pepper. When done, remove the meat with a slotted spoon leaving the drippings in the pan. Add the onions and saute. Reduce the heat to low and add the flour stirring continuously for 2 minutes. It should be thick but not lumpy. Add the garlic and wine to deglaze the pan (get all the stuck on browned bits off the bottom of the pan) It will start to thicken as it warms up. Simmer for 5 minutes, then add the broth, meat, and remaining spices. Bring to a boil and simmer covered on low for 1 hour. Add vegetables and simmer an additional 30 minutes. Taste to adjust salt and pepper.
