1 envelope of Knox Gelatin
½ cup cold water
½ cup sugar
2 egg yolks
¾ cup milk
2 egg whites
4 ½ ounces of Cool Whip.
10 graham crackers, crushed fine
3 tablespoons melted butter
3 tablespoons brown sugar

Directions:
Directions:
Pour Knox Gelatin into cold water, stir to blend and set aside.

Mix the following in a double boiler:
½ cup sugar
2 egg yolks
¾ cup milk
Cook over medium heat stirring frequently to avoid scorching. Cook till thick in consistency.
Remove from heat and add the gelatin mixture. Add 1 teaspoon vanilla. Set aside to cool.
Beat 2 egg whites and fold in the above mixture. Fold in 4 ½ ounces of Cool Whip.

Make a Graham cracker crust as follows:
Graham crackers, crushed fine, melted butter and brown sugar.

Reserve about ¼ cup of the mixture for topping. Mix together and press into an 8 x 8 baking dish. Add whipped mixture. Refrigerate until mixture is set up. Sprinkle some graham cracker crumbs over top.

This recipe is from my mother. She gave it to me about a year after we moved to Washington. I could never make it like she could, though, so I called it graham cracker ‘Flop”. This was one of Jeremy’s favorites.
