1 cup yellow corn meal
1 cup cold water
1 teaspoon salt
1 teaspoon sugar

Directions:
Directions:
Mix above ingredients together in a small bowl.

In a large saucepan, bring 2-3/4 cups of salted water to a boil; gradually add the cornmeal mixture to the boiling water, stirring constantly; cook until thick, stirring frequently. Cover, cook over low heat 10 to 15 minutes.

Pour mixture into a 7-1/2”x 3-1/2” x 2-1/4” loaf pan. Cool; chill several hours or overnight.

Turn out onto a cutting board; cut in ¼ inch slices. (Optional: roll pieces in flour). Pan-fry in small amount of oil until golden brown on both sides.
Serve with butter, maple-flavored syrup or honey.
