1/2 bushel Ripe Tomatoes
1 Jumbo Spanish Onion
6-8 Jalapeņo Peppers
3 Green Peppers
2 T. Chili Powder
2 T. Cumin
1 T. Cayenne Pepper
1 c. Vinegar
3 T. Sugar
1 tsp. Salt

Directions:
Blanch, peel and chop tomatoes Chop onion and peppers. Mix tomatoes with all ingredients except for the onions and green peppers. Drain off excess liquid and bring to a boil, reduce heat and simmer several hours (2-3) stirring frequently. Add the onion and green pepper into the tomato mixture. Bring to a rolling boil, cook for 5 minutes.

Pour into hot jars. Remove air bubbles with a spatula and wipe the rim with a damp cloth before you put the lids on. Seal with hot lids.
Process in a water bath, 15 minutes for pint jars.
