1 cup quick oats
1 cup shredded coconut
1 cup flour
1 cup sugar
1/4 teaspoon salt
1/2 cup unsalted butter
1 tablespoon syrup or honey
1 teaspoon baking soda
3/4 cup boiling water

Directions:
Directions:
Grease cookie sheet and set oven at 350 degrees.
Mix oats coconut flour sugar and salt in large bowl.
Melt butter and gradually add syrup or honey in small pan.
Mix baking soda into boiling water and add to butter/syrup mixture.
Add liquids to dry mixture and stir well.
Drop tablespoons of batter onto sheet pan 3 to 4 inches apart.
Bake about 15 minutes until golden brown.

This recipe was used by women to send treats to their loved ones in the Australian New Zealand Army Corp (ANZAC) during World War I. The ingredients were readily available, inexpensive and could hold up well during the two month voyage to Europe, and still taste good when they arrived.
