2 (3 ounce) packages lime jello
2 cups boiling water
1 (8 ounce) package cream cheese, softened
1 cup Miracle Whip
1 medium cucumber, peeled, and chopped
1 dill pickle
1 tablespoon grated onion

Directions:
Directions:
1. Pour the Jello into a medium bowl, and stir in the boiling water. Set aside to cool slightly.

2. In a blender or large food processor, combine the cream cheese, salad dressing, cucumber, pick;e, and onion. Process until fairly smooth. Stir into the Jello mixture. Pour into a mold, or leave in the bowl. Refrigerate for 3 hours, or until firm.

I don't remember the year, but I was working at the Probation office in Paris and my mother made this salad. I shared it with Linda Pittman and we both loved it. Megan and Ryan do not like it and I'm glad, I don't have to share. I make this once a year in the hottest part of the Houston summer and eat on it for about a week. Now that's self control.
