Ingredients:  
1 1/2 lb. ground beef
1 tbsp. olive oil
1 1/2 tsp. salt
Dash of Pepper
1/8 tsp. garlic powder
1/8 tsp. thyme
one medium onion (chopped)
1/8 tsp. oregano
1 bay leaf
1 can cream of mushroom soup
1 cup instant rice
8 slices of cheese
1 can diced tomatoes (fire roasted)

Directions:
Directions:
Brown beef and onion in olive oil until beef is done. Drain grease from pan. Add the other ingredients except the cheese and bring to a boil. Reduce heat to a simmer for five minutes. Place in a casserole dish with the cheese slices on time. Bake in a pre-heated 350 degree oven until the cheese melts.

This recipe was created by my friend Elise's Mom ( Bea Silver ) in the late 1960's. I loved this when I was a kid and I still do. It is so easy to make and so fast.
