(1/2)( For 20-25 lb turkey)
(2) 4 c. turkey broth
Liver and neck meat from Turkey
(2) 4 large bags of croutons
(1/2) 1 T. sage
(1) 2 T. poultry seasoning
Salt & Pepper to taste
(5/8) 1 1/4 c. celery
(3/4) 1 1/2 c. onions
(1 1/2) 3 sticks butter
(night before)
Cook giblet in enough water to have 4 c. of broth.Cool (Plus some for gravy)
Cut liver in small pieces; pull neck meat from bones. Store broth and giblets in refrig. until ready to use.
(morning of)
Cut celery and onions in small pieces. Saute in 3 sticks of butter. Heat broth.
Put croutons in large container.
Add: 1 T. Sage, 2 T. Poultry Seasoning, Salt and Pepper. Mix lightly.
Add: Liver and neck meat, Celery, Onions, and Butter.
Pour broth over the mixture; tossing lightly as you pour.
Salt turkey Cavities; stuff turkey.

22 lb Turkey-325 degrees-Cook 7 hours.
Use foil cap; remove last 1/2 hour if turkey hasn't browned.
