3 cups shredded cooked chicken
2 cloves garlic pressed
1 cup onion (or 1 T. dried minced onion)
1 jalapeņo pepper, seeded and chopped
3 can Great Northern Beans
2 teaspoons vegetable oil
3 cans (14.5 ounces) chicken broth
2 T. Southwest Seasoning or Taco Seasoning
1/4 cup lime juice
1 T. cornstarch
1 T. cold water
1/4 cup fresh cilantro, snipped

Directions:

Chop onion and jalapeņo.
Drain 1 can of beans. Transfer to bowl. Squeeze garlic into beans. Mash into beans.
Drain other 2 cans of beans. (Keep whole).
Heat oil in Dutch oven over medium heat. Add onion and jalapeņo. Cook 4-5 minutes until tender.
Add chicken, mashed beans, whole beans, chicken broth, seasoning, and lime juice. Bring to a boil. Reduce heat and simmer 25 minutes.
Snip cilantro. Stir into chili just before serving.
