Coat the bottom of the pot with olive oil
1 package of Split, Bone In Chicken Breasts
1 large onion, diced
4-5 stalks of celery with leaves, diced
2 cups of diced carrots
1 to 2 heaping tablespoons of poultry seasoning.
2 to 3 cloves of garlic, minced
2 qts of chicken broth
2 to 3 hand fulls of egg wide noodles
2 cubes of chicken bullion
Salt and Pepper to taste

Gold fish crackers, or oyster crackers to serve with it

Directions:
In a dutch oven, or pot coat the bottom with olive oil. Throw in the onions, celery, carrots and cook for 5 minutes. Add in the garlic and cook for another 3 minutes. Add the poultry seasoning. Place the chicken in the pot with the chicken broth. Add the chicken bullion and bring it to a simmer. Simmer the chicken till its cooked. Once the chicken is cooked, turn off the heat and take out the chicken, and shred it. Once the chicken is shredded. Skim off the fat of the soup. I use paper towels and spoon. Put the chicken back in the pot, and bring the soup to a bowl. Add salt and pepper to taste. Add the egg noodles and cook till they are el dente.

Dish it out and yum.
