1 cup chopped dates ( 8 oz pkg )
1/2 cup water
1/4 cup sugar
1 1/2 cup quick oats
1 cup flour
1 cup dark brown sugar
1/2 tsp soda
1/4 tsp salt
1/3 cup melted butter
1 egg white

Directions:
Directions:
In small saucepan combine dates, water and white sugar. Cook and stir until comes to a boil , reduce heat, simmer uncovered 5 min or until thickened stirring often.
In large bowl combine oats, flour, brown sugar, baking soda and salt. Stir in butter and egg white until blended. Pat half mixture into 8x8 square pan coated with cooking spray. Carefully spread with date mixture. Gently pat remaining oat mixture over date mixture. Bake 350 for 22 min.

I bet it would be wonderful with yogurt too! I double this and use 9x13 pan.
