1 CAN OF FAT FREE COCONUT MILK
3 TBL POWDER SUGAR
(can add small amount of any additional flavoring desired - cinnamon, vanilla bean, etc.)

Directions:

Refrigerate a can of full fat coconut milk overnight.
Open the can without shaking and carefully spoon out the top layer of opaque white stuff that has gathered at the top of the can into a bowl. (the remaining liquid can be used or discarded) Add 3 TBL of powdered sugar into the coconut (you can add a small amount of any additional flavor desired-cinnamon, vanilla bean, etc).
Whip this mixture with a hand beater, starting on low and moving higher, pumping up and down to infuse as much air as possible in mixture..
