For the Chicken:
1 3-pound Chicken (cut into 8 pieces)
Salt and Freshly Ground Pepper
Extra Virgin Olive Oil

For the Barbecue Sauce:
1 cup Ketchup
1/4 cup White Vinegar
1/4 cup Brown Sugar
2 tablespoons Butter
1 tablespoon Worcestershire
1 tablespoon Lemon Juice
1 teaspoon Jerk Chicken Rub
1/2 teaspoon Salt
1/4 teaspoon Cayenne Pepper

For the Jerk Chicken Rub:
3 tablespoons smoked paprika
3 tablespoons sweet paprika
2 tablespoons cayenne pepper
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt

For the Jerk Chicken Rub: Mix all ingredients together.

For the Barbecue Sauce: Mix all barbecue sauce ingredients (which includes the jerk chicken rub made above) in a small pot and simmer over a low heat for 15 - 20 minutes. Adjust salt, if necessary.

For the Chicken: Preheat the grill or grillpan to medium-high heat.

Season the chicken on all sides with salt and pepper. Place on the grill and cook each piece for about 5 to 8 minutes per side, but check pieces for doneness, cooking for longer if necessary to cook through. Brush the pieces of chicken with barbecue sauce, or put the chicken in a bowl and toss with the sauce.
