Cook chicken in enough water to cover. Remove chicken from bones, leaving broth in pan to simmer. Salt and pepper broth to your taiste.
In a large bowl put 4 to 5 cups of flour. Make a well in the flour. Put a pinch of salt in the well. Add enough boiling broth to flour so when stirred a ball begins to form. When the dough "feels right" place on floured surface and roll to a thin rectangle. Cut in squares with sharp knife and drop into simmering broth. Shake pan, don't stir,

These directions are a little vague. When I asked how to know how the dough should feel Grandma said between biscuit dough and pie crust ??!! Experiment and have fun. No one could make dumplings any better than Grandma!
