1/3 cup honey
1/4 cup lime juice and zest of a lime
1 T chili powder
1 tsp cumin
1 tsp coriander
salt and pepper
2 cloves minced garlic
8 oz Mexican Cheese blend
6 slices Pepper Jack Cheese
8 to 10 corn tortillas ( even 12 )
1.5 lbs chicken breast cooked and shredded
1 can Medium Green Enchilada Sauce
1 cup 1/2 and 1/2
Chopped cilantro

Preheat oven to 350
prepare pan with cooking spray

Place shredded chicken in bowl, add honey, lime juice, spices, salt and pepper and Mexican cheese.

Prepare corn tortillas by brushing them with oil and placing on cookie sheet, they can overlap some. Bake for 5 or 6 min till soft.

Fill each tortilla and roll,place in pan. Combine enchilada sauce, 1/2 and 1/2 and lime zest, salt and pepper. Pour over enchiladas. Top with pepper jack cheese. Bake 25 min
