Indian Moong Beans with Spinach Recipe

1 c moong dal with skins (whole Mung beans)
2 c chopped spinach (10 oz 'block' of frozen chopped spinach works well)
1 tsp shredded ginger (or 1/4 tsp dried ginger)
1/2 tsp turmeric
1 1/2 tsp salt (adjust to taste)
4 c water
1/4 tsp garam masala
1/2 tsp lemon juice (adjust to your taste)
--- Chaunk (seasoning) ---
2 Tbsp ghee (or butter)
1/2 tsp cumin seed (Jeera) (or ground cumin)
Pinch of asafetida (hing) (I omitted)
4 whole red chilies (I used dried Arbol chilis)
1/4 tsp cayenne pepper

Wash dal changing water several times till water becomes clear. In pressure cooker put dal, spinach, ginger, turmeric, salt and water and close the cooker. Cook over high heat till dal comes to boil (cooker indicates pressure is reached). Reduce the heat to medium and let it boil for nine minutes. (If cooking in a regular saucepan, cook for about 25-45 minutes until tender). Turn off the heat and let the steam escape before you open the pressure cooker. Adjust the consistency of dal to your desire taste, adding boiled water as needed. Add lemon juice, and garam masala.
--- Chaunk (seasoning) ---
Heat the ghee or butter in small saucepan, add cumin seed wait until cumin seed cracks now add asafetida, and whole red chilis. Stir for few seconds and add cayenne pepper. Pour over dal.
*I accidentally left it on low heat covered so the butter and ground spices browned. It was delicious.
Serves 6.

Very flavorful, this is exceptional. Moong beans are available inexpensively at Indian grocery stores. This is the same as 'Mung' beans, available at Whole foods and other stores.
