PORK:
6 lbs boneless pork roast
12 ounce mild taco sauce
5 ounce hot taco sauce
12 ounce can cola
4 cups packed brown sugar
1large onion sliced
4 garlic minced
3 chipolte adobo sauce peppers diced
1 to 3 teaspoons of chipotle chilli powder
Salt and Pepper to taste

TOMATILLO DRESSING:
1 package ranch buttermilk dressing mix
3 tomatillos
1 cup mayonnaise
1 cup of butter milk
1 cup cilantro chopped
2 garlic cloves minced
1 teaspoon of chipotle chilli powder

RICE:
2 Tablespoons oil
1 lb. long grain rice, uncooked
4 clove3s garlic, minced
1/2 bunch cilantro, chopped
Juice of 2 limes
4 cups of water
1 lime zest
2 limes cut in half after juiced and placed in rice and remove right before serving.

TORTILLA BOWLS:
Tortillas
Cheese, shredded

Serve with chips, pico de gallo, guacamole, sour cream, black beans, shredded lettuce

Directions:
Add all the pork ingredients in the crockpot or roaster pot. Cook on low for about 6 to 8 hours. Take pork out of the crock pot and shred it with a fork. Before placing back into the pot with the juices, skim off the fat. Then place pork back in the with the juices.

I cook the pork the night before.

For the dressing, combine all the ingredients in a blender, on high and then chill.

For the rice, in a skillet, fry rice in oil. Add the garlic, and cilantro. Saute 3 to 5 minutes, stirring frequently. Add the lime juice and zest, and water. Cook until rice is done.

Tortillas bowls, sprinkle cheese on the tortillas, and then heat up in microwave to melt the cheese.

Serve with chips, pico de gallo, guacamole, sour cream, black beans, shredded lettuce.
