10 C. chopped unpeeled cucumbers
1 C chopped green Bell pepper
3 C chopped onion
½ C chopped red Bell pepper
3 C finely chopped celery
1/4 C salt
2 tsp turmeric
3 - ½ C sugar
2 C white vinegar
1 tbs celery seed
1 tbs mustard seed

If use food grinder, use coarse blade. Combine all chopped vegetables in large bowl; sprinkle with salt; let stand four hours. Drain thoroughly in colander, press out all excess liquid. Combine sugar, vinegar & spices; bring to boil, stirring until sugar is dissolved. Stir in drained vegetables; simmer ten minutes. Pack into canning jars to within ½ inch of top; seal lid firmly tight. Process in boiling water bath ten minutes. Yield: 5 to 6 pints.
