1 medium eggplant (1-1/2 lbs) cubed
2 small zucchini (1/2 lb), sliced
1 medium green bell pepper, cut in strips
1 medium onion, sliced
2 medium tomatoes, quartered (1 can tomato sauce may be substituted)
2 Tbs Veg. Oil
1/4 tsp pepper
2 cloves garlic, finely chopped (or more to taste)
salt to taste if desired

Pour oil in large (12 inch) skillet. Saute garlic and onion until tender. Add remaining ingredients and cook over medium heat until tender, stirring occasionally, about 10 - 15 minutes. Small amounts of water may be added if skillet gets dry. Cover or not as you prefer. Serve and enjoy.

For those that like the flavor of meat, Eckrich sausage or pre-cooked bacon may be used. Add them with the garlic and onion.
