1 and 1/2 cups shortening
3 cups sugar
6 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond flavoring
3 and 3/4 cups plain flour
3/4 cup milk
5 ounce jar of maraschino cherries, well drained and chopped

Cherry Nut Frosting:
8 oz. cream cheese, softened
1 pound box confectioners sugar
1 teaspoon vanilla
1 teaspoon almond flavoring
1 cup chopped nuts (walnuts or pecans)
1 cup coconut
5 oz. jar of marachino cherries, well drained and chopped

Cake:
Cream shortening and sugar together until creamy. Beating very well. Add eggs, one at a time, beating well after each addition. Add flavorings. Alternate adding flour and milk, mixing well after each addition. Fold in cherries. Pour into a large greased tube pan.

Place into a COLD oven. Set oven to 275º and bake 2 hours and 10 minutes or until done. Cool before frosting.


Cherry Nut Frosting:
Blend margarine and cream cheese until smooth. Gradually add confectioners' sugar. Beat until smooth. Add flavorings and mix well. Fold in nuts, cherries and coconut.

Cook's notes:
This frosting recipe makes enough to frost 2 pound cakes. You can divide in half for one cake.
