2 lb ground beef
1 medium onion
½ cup chopped parsley
¼ cup breadcrumbs
¼ cup grated cheese
½ tsp. salt
½ tsp. pepper
½ tsp. allspice

Batata (potatoes)
4 to 5 medium sized potatoes (peeled and sliced thin)

Sauce
16 oz. can tomato sauce
¼ cup water
1/4 tsp. pepper
1/4 tsp. salt
1/4 tsp. allspice

1 tbsp. lemon juice
2 tbsp. water

Directions:

Chop onion. Add ground beef, breadcrumbs, parsley, salt, allspice and pepper. Mix well. Add the lemon juice and 2 tbsp water to keep the meat mixture moist.

Spread the meat mixture to fit your pan.

Layer the potatoes on top of the meat.

For the sauce, mix together the tomato sauce, water, salt and pepper.

Add the sauce to the potatoes.

Bake in 350° oven for 1½ hours (or until potatoes are cooked)

*Optional- layer tomato slices on the potatoes prior to cooking.

Kafta wa batata is truly a meat and potatoes dish. It is a meal that is loved by adults and children alike. Mom usually made this meal when the grandkids were going to be visiting because she knew that the kids would eat well. This is probably one of my favorite meals, and my kids happen to agree with me.
