9 inch round layer yellow cake (from scratch or cake mix)
2 qt strawberry ice cream (or any flavor you like)
6 large egg whites (3/4 c)
½ tsp cream of tartar
1 c sugar

Directions:
Pack ice cream in round bowl about 1 inch smaller around than layer cake. Place in freezer until serving time. Shortly before serving, beat egg whites with cream of tartar until frothy. Gradually beat in sugar. Continue beating until meringue is stiff and glossy. (Heat oven to 500). Place cooled layer of cake on a wood cutting board on a baking sheet. Loosen ice cream from bowl with spatula. Invert bowl over cake. Remove bowl. Cover cake and ice cream with meringue, sealing meringue to board for a complete seal. Bake 3 to 5 minutes, or until meringue is delicately browned. Slip the dessert onto a serving platter, board and all, if board is small. Serve immediately.

I was intrigued by the beautiful picture of this in Mom's cookbook growing up. I was very proud when I made this in college. We had a few of us in our 'suite' at MIT who were into trying unique and gourmet recipes in our dorm suite kitchen.
