2 c flour
1 1/3 c sugar
1 tsp soda
1/4 tsp salt
2 eggs, slightly beaten
1 tsp vanilla
2 cups (20 oz) crushed pineapple, undrained
1/2 c brown sugar
1 c shredded coconut
1/2-3/4 c chopped pecans
1/2 stick margarine
3/4 c evaporated milk
1/2 c sugar

Directions:
Directions:
Combine flour, sugar, soda, and salt. Add slightly beaten eggs, vanilla, and pineapple. Mix well. Combine brown sugar mixed with coconut and nuts; sprinkle on top of cake. Bake in a 9x13 pan at 350º for 30 minutes. Let cool for one hour. Cook 1/2 stick of margarine with evaporated milk, and slowly add 1/2 c. sugar. Cook on medium heat and stir slowly until thick. Quickly pour topping over cake and spread. Let cool and serve. Take your time cutting this cake; it is worth the wait.
