1 cup wild rice
1 T. butter
3 cloves garlic, smashed
4 cups chicken stock/ or water
2 T olive oil
2 stalks celery, chopped
1 yellow bell pepper
sherry or white wine
1 pkg chicken sausage, sliced into rounds (any kind you like)
1 can artichoke hearts, roughly chopped
sliced almonds (optional)

Melt butter in large Dutch oven, add smashed garlic and saute on low. When garlic is fragrant, stir in the wild rice and either broth or water. Bring to a boil- turn to low and cover. Simmer for 20 minutes.

Saute the celery and bell peppers in the olive oil. Generously sprinkle with Old Bay seasoning. Add sliced sausage and brown. Deglaze the pan with 1/4 cup sherry, white wine or chicken broth.

Add sausage and vegetables to Dutch oven, stir and put in the oven, covered. After an hour, remove from oven, add artichoke hearts, stir and put back in the oven, covered, to cook for another 30 minutes.

Check to see that the rice is cooked- it should be firm, but tender. Top with sliced almonds if desired.

Makes Great leftovers!
