3/4 c shortening
2 c sugar
3 eggs, beaten
2 1/2 c flour
2 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 c cocoa
2 c shredded raw zucchini
2 tsp vanilla
1/2 c milk

Directions:
Directions:
Cream shortening and sugar. Add eggs. Set aside. Sift together dry ingredients and cocoa. Add to creamed mixture and mix well. Add zucchini. You will need to mix by hand. Add vanilla and milk. Be sure to mix well. Spread batter into well greased and 9x13 floured cake pan . Bake at 350º for 40 to 50 minutes or until cake tests done.
