2-3 lbs Spare ribs
water
1 bag sauerkraut
2 cans whole potatoes, or 6-8 fresh potatoes quartered
Salt & peppercorns for taste

Dumplings.....
2 cups of flour
4 tsp. baking powder
1/2 tsp. salt.
about 1 1/4 C of milk

This recipe is done on the top of the stove....if you are using a long roasting pan, arrange the pan evenly on top of two burners (back and front) and adjust equal flames (not too high).
Put ribs in roasting pan or big pot on the top of the stove.
Cover ribs, just barely, with water.
Add salt and peppercorns....whole peppercorns...figure out how much you'd like for the amount you have.
bring to a boil, turn down to simmer (with lid) about an hour and a half.
Add sauerkraut, (drain juice from sauerkraut) and simmer another hour.
Add potatoes or peel your own and add to pot. (If using canned add the potatoes closer to the end of the hour you have been cooking the sauerkraut....otherwise, fresh-peeled takes longer...
at the end add dumplings.
(this mixture should be 'gluppy' not thin and runny...)
Spoon out mixture, one scoop at a time, leaving only a little space in between spoonfuls....plopping each spoonful directly on top of all the potatoes, ribs and sauerkraut. Put on the lid for another 12 to 15 minutes.
Serve from the pot...ribs, sauerkraut, potatoes and dumplings....then spoon a little juice over each serving.
