Ingredients: 1 jumbo bag of pre-cut slaw or 2 small ones 3-4 fresh jalapeņos, seeded and finely chopped 1 bell pepper, chopped 1 tall jar of salad olives ( not chopped) big jar of pimentos purple onion, chopped 1-2 bunches of cilantro, well chopped hot pickled carrots, (this is the secret ingredient and can be found in cans from the Mexican food section). Chopped red wine vinegar and Paul Newman's Oil & Vinegar or Family Italian sea salt and coarse- ground pepper

Directions:To the bag of pre-cut slaw add all of the ingredients. If there is anything on the list you don't like, don't put it in. The jalapeņos may add a little more heat then you like but if you chop them finely enough it shouldn't be a problem. You can use a yellow or red bell pepper when they are in season to add color. When you add the olives just slop 'em into the slaw as you fork them outta the jar, making sure you slop some of the vinegar in there with 'em. You can add as much or as little of the purple onion and the hot pickled carrots as suits your taste. Douse the red wine vinegar liberally, then add (much less liberally) Paul Newman's Oil & Vinegar. Season with the salt and pepper. Refrigerate overnight or at least a few hours to let it all marinate. YUM!!!!! |

Notes: This is my made-up kitchen-sink slaw, inspired by Luby's "Spanish Slaw". As usual, no measuring. As usual, if I'm gonna "cook", I go big. This one's a hit.
