1 8-9 lb chuck steak, boned rolled and tied
2 lb onions, thinly sliced
2 c dark beer or ale
1/2 c oil
1/4 c cider vinegar
2 large cloves garlic, pressed or minced
3 bay leaves
1 Tbsp dry mustard
1 1/4 tsp basil
1 tsp freshly ground pepper
1 tsp thyme
1/2 tsp oregano
1/2 tsp marjoram

Directions:
Place steak in large bowl. Combine all ingredients and pour over meat. Cover and refrigerate 2 days, turning meat often. Preheat oven to 425º. Drain meat, reserving marinade, and place in Dutch oven or deep roasting pan. Remove onions from marinade with slotted spoon and spread around meat. Place in oven and brown meat well on all sides. Reduce heat to 350º and cook 2 to 3 hours or until meat thermometer says done, basting generously with marinade every 20 minutes, then baste with juices. Remove meat from pan and let sit 10 minutes. Skim excess fat from pan, adjust seasoning.

Alternate: Make as above, but use several 1 lb steaks. Broil steaks, and make 'au jus' from drippings.
